Energy Balls

Hi everyone!  Today I have a fun, easy, yummy and mostly healthy recipe for you :)

I wanted a quick, healthy-ish snack for the kids to be able to grab on the go.  I found this recipe for no-bake energy bites on Pinterest, which was posted originally by Smashed Peas & Carrots.  Now, this mom is probably a lot more healthy than me- but, I try :)

Here are the ingredients you will need:

1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup wheat germ (her recipe called for coconut- but, we aren’t a coconut-friendly home)
1/2 cup ground flaxseed
1/2 cup mini chocolate chips (I’d use dark chocolate chips next time because they are better for you)
1 tsp vanilla (homemade is the best)
Mix all of the ingredients together – I used my kitchen aid, and it took just a couple minutes. Throw into the fridge for about an hour to chill, and then using a cookie scoop, scoop out and form into balls.  Put in sealable containers and refrigerate for up to 1 week.

The best part is- I told my kids they were “Energy Balls” and they each ate one and then took off running-and then said,  ”yep…they work!”
I hope they work that way for me this week too! :)

  2. LOVE this idea!!! Do you think the addition of coconut & wheat germ would work together? I LOVE both! I have no ‘Little Ones’ running thru my house but would love an easy, quick snack! Any idea of the Nutrition Facts on these? Thanks for the recipe.

    • YOu can mix in coconut as well but, I would use 1/2 the amount of each :) . No idea on the calories for these because it wOyld depend in the peanut butter used as well as the addins – but, they are a balanced snack :)
